How to make healthy stuffed cucumbers

What is a stuffed cucumber? Well, it’s time you found out.  Cucumbers are healthy, low in carbs, and high in nutrients!

 Ingredients:

  • 1 600g Cucumber (sliced approximately 1.5-2″ per section)
  • 2 tbsp fat free cream cheese
  • 1/2 c fat free greek yogurt
  • 4.5 oz. Cooked Chicken
  • Fresh dill *garnish

Cut cucumbers into sections, pulse other ingredients (minus dill) in a blender. Cut out the center of each cucumber slice. Fill with mixture, top with dill.  Watch the video for the full tutorial!
