Grilled Chicken Primavera

A hearty Italian meal for the hearty weightlifter.

Ingredients:

2 chicken breasts, boneless & skinless
2 cups whole wheat pasta, cooked
½ cup cherry tomatoes
½ cup chopped asparagus
¼ cup fresh basil, finely chopped
¼ cup fresh oregano, finely chopped
3 tbsp extra virgin olive oil

Directions:

1. Place chicken breasts on a hot grill and cook until done.
2. Wash and trip asparagus, then place on grill. Cook for 5 minutes, turning frequently.
3. Allow asparagus and chicken to cool 5 minutes.
4. Cut asparagus into 2” pieces and chicken into ½” slices.
5. In a large bowl, mix cooked whole wheat pasta, chopped herbs, tomatoes, asparagus, chicken, and 2tbsp extra virgin olive oil.
6. Plate and serve.
