Fuel for recovery, of any sort. Great in the winter.
Ingredients:
2 Chicken breasts, boneless & skinless
3 ribs of celery, finely diced
2 medium carrots, finely diced
1 medium onion, finely diced
6 cups water
1tbsp olive oil
2 cups brown rice
Directions:
1. Cut chicken into ½” cubes.
2. In a large pot, cook chicken until done. Remove from pan.
3. In the same pot, pour in olive oil and onions, cooking for 3 minutes until onions soften.
4. Add carrots to the pot, cook for 3 more minutes. Add celery and cook additional 2 minutes.
5. Add 1 cup of water to the pot, stirring with a wooden spoon to remove anything stuck to the bottom of the pot. (This will add flavor to the soup in lieu of pre-packaged broth.)
6. Add the remaining 5 cups of water and bring to a slow boil.
7. Add rice and the cooked chicken to the pot.
8. Cook until rice is done and serve.
